I noticed this weekend that starting Wednesday here in Okieland that celery, sweet potatoes, turkeys, etc are all going on sale for dirt cheap prices. So now is the time to grab and can or dehydrate for the rest of the year. For example:

Sweet potatoes are on sale for 3 lbs for 99¢ so I will be dehydrating those too for wonderful sweet potato casseroles and candied yams. You’ll find my step-by-step directions here.


And get extra turkeys if you can. Put them in the freezer for later. After Thanksgiving, I’ll be showing you how to can the meat for wonderful pot pies, casseroles and turkey and dressing.

    Jeez, just last week I cooked the turkey breast I bought after Thanksgiving LAST year!! LOL!! At least I made stock out of the carcass, I’m so proud! 😉

  2. Well good for you Candy. Now you can buy two or three turkeys and put them in the freezer or can them for all NEXT year! 🙂

  3. Well, thank you Barbara!! And yes, you can “bile” it if ya want. That’d be right up there with “erl” fer yer ve-HICK-el.
    🙂 Yes, we used to kill hogs and I was the one that always ended up cutting it up, wrapping the cuts, grinding the sausage and wrapping that and curing the hams and bacons. Long, hard work.

    I read the post on dehydrating and canning sweet potatoes. How do you vacuum seal jars? We have a vacuum sealer for bags but vacuum sealing in jars would be a great option. Thanks!

  7. Brenda, FoodSaver makes vacuum sealers that do the bags but that also come with a separate port that handles a tube to two different size caps for sealing. One is for regular mouth jars and the other is for wide mouth. You warm your lids in hot water just like for canning, put those on the top of the jar and then place the cap with hose tightly over that. You use the canister setting and voila, it’s vacuumed and sealed. You can find them online at Foodsaver.com
